Today’s recipe is the potato cutlet recipe. Also known as aloo chop or alur chop, this is a street-food dish famously eaten at tea-time. You can make it very easily
Ingredients
- Potatoes boiled and mashed- 2/3 medium
- Onion chopped- 1 tbsp
- Roasted chili flakes- 1 tsp
- Salt- 1/2 tsp
- Garam masala- 1/2 tsp
- Roasted cumin powder- 1/2 tsp
Gram flour Batter
- Gram flour/Chickpea flour- 1/2 cup
- All purpose flour- 1/4 cup
- Rice flour- 1/4 cup
- Salt- 1 tsp
- Chili powder- 1 tsp
- Garam masala- 1/2 tsp
- Roasted cumin powder- 1/2 tsp
- Food color- 1/4 tsp
- Baking powder- 1/2 tsp
- Garlic ginger paste- 1 tbsp
- Water- 3/4 cup or as required to make a semi thick batter
Other
- Oil for deep frying, as required
Instructions
Step 1
Take all dry batter ingredients gram flour (besan), all-purpose flour, rice flour, salt, red chili powder, garam masala, roasted cumin powder, food color, and baking powder into a bowl. Add water in small portions and whisk until lumps dissolve. Add more water and prepare the semi-thick batter. Ensure that the batter is smooth and that there are no lumps in the batter. You need a smooth but thick batter, so adjust the quantity of water accordingly. The batter is ready to keep it aside.
Step 2
Take in a bowl the mashed potatoes. Add chopped onion, roasted chili flakes, salt, garam masala, roasted cumin powder, and mix everything well. Now divide the potato stuffing into 8-10 parts. For chop lift some mix and make it round then press and flatten it. This is how aloo chop is shaped authentically.
Step 3
Heat oil in a deep frying pan on medium heat. Dip the chop in batter and put the hot oil, fry on medium heat. Fry until the outer coating turns golden brown and crispy. Now serve it and enjoy!
