Basmati rice – 1 cup
Jorda color/orange food color – 1 teaspoon
Sugar – 1 & 1/4 cup
Orange Juice – 1/2 cup
Water- 1/2 cup
Orange Pulp- 1/2 cup
Ghee – 1/4 cup
Whole garam masala-cinnamon, cloves
Nuts – 3 tbsp chopped
For Garnishing: Mini Golabjamun – as needed
Chopped nuts – as needed
Wash the rice and drain the water. Soak the rice in water for at least 30 minutes before you make jorda.
Boil enough water in a large pan with 1 teaspoon of orange food color or jorda color. When the water has boiled, add the rice. Once the rice is 80%-90% cooked, remove from flame and drain all water and keep aside.
In a pan add 1/2 cup of sugar with 1/2 cup of orange juice. Next mix 1/2 cup of water, and 1/2 cup of orange pulp. Add whole garam masala and 1/4 cup of ghee. Mix well and cook until sugar is dissolved. Next, add cooked rice and stir it with a light hand. Now cook it on high heat for 10 minutes. After 10 minutes turn the heat from high to low. Then cover it and cook on low heat for 10 minutes. When the water is almost dried out add 3 tablespoons of chopped nuts, mix it with a light hand, and put it on dum for 10 minutes. After 10 minutes turn off your stove.
Once cooked transfer to a serving plate. Garnish with mini sweet, chopped nuts or as you like.
